Iceland native Thor Hjaltason and his wife Laura from Texas have taken over Bubba’s restaurant from Ed Hofnel, who is now living in the U.S. recovering from an illness.
The Hjaltsons plan to open the other half of the restaurant, open earlier for breakfast and are installing WiFi next week. Most of the menu will stay the same, but a few new items, including healthy dishes, are on the drawing board. The couple and their 6-year old dauther Thorina moved to lakeside after three years in China where Thor worked as an LED lighting expert. Here, Thor gets ready to reopen with his restaurant staff.
